Fats, especially saturated fats, have been demonized for more than half a century. We were encouraged to eat “low fat” foods for fear of gaining weight and getting some heart disease if we dared to put too much fat on our plate. However, the evidence clearly shows that healthy fats are not the enemy, but are absolutely necessary for our health. Yes, fat and oil contain more calories than the same amount of protein and carbohydrates, so we have to compensate by minimizing refined carbohydrates and sugars. In addition, refined carbohydrates and sugar are stored as fat in the body if not used quickly for energy, so we might as well eat the tasty fats first. The benefit of this is twofold as we will not upset our blood sugar balance. Fats are also satiating and help to prevent the frequent feelings of hunger and strong cravings for certain foods, of which refined carbohydrates are known to be the culprits, and this helps to keep our calorie intake at the required level.
If you feel like it would be good for you to increase your fat intake and at the same time severely limit refined carbs/sugar, it would be wise to monitor your calories for a while until you start to intuitively get a feel for how much food is appropriate to eat in a day. And don’t make drastic changes abruptly – make the changes gradually, within a week or two.
It is also extremely important to distinguish between healthy and harmful fats.
Useful fats that are essential for health include:
- Saturated fats from pasture-raised animals and tropical plants – e.g. Aberdeen Angus beef, Kerrygold butter, free-range eggs, coconut oil.
- Monounsaturated fatty acids – e.g. unrefined olive oil, avocado and macadamia nuts.
- Polyunsaturated fatty acids – e.g. flaxseeds, apricot kernels, pumpkin seeds, walnuts, seaweed and other nuts and seeds. They contain mainly a combination of Omega 3, 6 and 9 fatty acids.
At the same time, avoid consuming ‘harmful fats’, which are widely used in commercially available margarines and bakery products such as biscuits, cakes, pies, doughnuts, confectionery and processed and convenience foods. Avoid also most salad dressings available in stores.
Fatty acids are mostly used by the body to produce hormone-like substances called “prostaglandins” that regulate and refine multiple functions. They are vital for mental functions (especially Omega 3 docosahexaenoic acid/DHA), eye health, neuro-transmitter formation and brain communication, etc.
As for cooking, it is very important to use fats that are stable at higher temperatures. It is usually best to use coconut oil or olive oil, but always cook at the lowest possible temperature and for the shortest time. NEVER use polyunsaturated fats in cooking (sunflower oil, vegetable oils, safflower oil, etc.) Literally all bottles of “cooking” oil available in supermarkets and neighborhood stores are already highly oxidized and not a good choice for health even before you heat them further. Extreme care must be taken when extracting the fatty acids from the nuts and seeds so that they do not spoil and go rancid (which you will not feel when consuming because commercially oxidized oils are deodorized before bottling). Extracting fatty acids without oxidizing them and therefore damaging them is a difficult and costly process.

Several of the ingredients deserve special attention. First, evening primrose and borage oils contain an essential fatty acid called “GLA (gamma-linolenic acid)”. Although in theory the body can produce it from linoleic acid, which is found in Omega 6 fatty acids, in practice many people are unable to carry out this process. GLA is highly valued for its powerful anti-inflammatory properties.
Schizochytrium Sp. is a fast-growing unicellular seaweed that contains extremely high levels of DHA (docosahexaenoic acid). The human brain is composed of about 60% lipids, about 25% of which is cholesterol, necessary for the construction and synthesis of steroid hormones. DHA, which is present in AquaSource Complex Fatty Acids in the form of marine microalgae, accounts for 97% of the omega-3 fatty acids in the brain. Cold-water oily fish, such as wild Alaskan salmon, are a good source of DHA, but this seaweed is a superior and sustainable plant-based option.
