Aubergines are one of the vegetables that arouse mixed feelings in most people. Some consume them prepared in a variety of ways, others do not even want to smell them.
Baba Ganoush is a Middle Eastern variety of quinoa that presents eggplant in a different light.
Ingredients needed:
- 2 eggplants
- 3 tbsp raw whole wheat tahini
- 3 garlic cloves
- ½ cup parsley
- the juice of 1 lemon
- ½ tsp. cumin
- 1 pinch of red pepper
- ½ pinch of cayenne pepper
- 1 pinch of black pepper
- 1 pinch of salt
Peel the aubergines, cut them into large pieces and soak them in salted water. After 20 min rinse them.
Boil or bake at 220 degrees for 15 minutes.
Mix the remaining ingredients and once the eggplant is ready mix.
Puree until homogeneous. Refrigerate for 2 hours before eating.
